ITALIAN CHAMPAGNE METHOD

Grapes: Chardonnay 75%, Pinot Blanc 10%, Pinot Noir 15%.
Making: the basic wines are separately managed according to their own features. The blend (cuvée) is also made with the same kind of wines, but coming from the best vintages (at least 20%).
Lenght on the yeast: at least 28 months
Dosage: 10 ml of Liquer de Expedition each bottle

- Alcohol: 12,5 % Vol.
- pH: 3,15
- Volatile acidity (grams acetic acid per 100 ml): 0,31 gr/lt
- Total acidity (grams tartaric acid per 100 ml): 7,10 gr/lt
